6. Bake until lightly brown, about 35 minutes. Cool the logs for 5 minutes.
7. Using a serrated knife, cut the logs crosswise into 1/2-inch-thick diagonal slices. Arrange the biscotti cut side down on the same baking sheet.
8. Bake until the biscotti are pale and golden, about 25 minutes.
9. Cool the biscotti on the baking sheet for 5 minutes. Using a metal spatula, transfer the biscotti to a rack and cool completely.
10. Melt the chocolate chips in the microwave, stirring every 20 seconds, about 1 1/2 minutes total. Dip 1 cut side of each biscotti into the melted chocolate. Gently shake off the excess chocolate.
11. Place the biscotti, chocolate side up, on the baking sheet. Refrigerate until the chocolate is firm, about 35 minutes. Dip a pastry brush in the cocoa, then lightly brush the cocoa over the chocolate on each biscotti.
12. The biscotti can be made ahead. Store them in an airtight container up to 4 days, or wrap them in foil and freeze in resealable plastic bags up to 3 weeks.

Parmesan-Baked Salmon
  • 1/4 cup mayonnaise
  • 2 tbsp. grated parmesan cheese
  • 1/8 tsp. ground red pepper (cayenne)
  • 4 salmon fillets (1 lb.) skin removed
  • 2 tsp. lemon juice
  • 10 Ritz crackers, crushed (about 1/2 cup of crumbs)
  1. Preheat oven to 400 degrees F. Mix mayo, cheese and pepper until well blended; set aside.
  2. Place salmon on foil-lined shallow baking pan. Drizzle evenly with lemon juice. Top with cheese mixture; spread to evenly cover salmon. Sprinkle with cracker crumbs.
  3. Bake 12 to 15 minutes, or until salmon flakes easily with fork.

Makes 4 servings.

So, I have an apple pie in the oven (we went apple picking on Saturday) and I used 3 separate recipes to make my own and if it turns out okay, I will post it here. Smells good already though!

Sex in a Pan AKA Layered Dessert

1st layer

1 cup flour
1 cup chopped walnuts
1 stick of butter

Mix together and press into a 9x13 pan.
Bake at 350 F for 15 min...let cool

2nd layer

1 cup sugar 8 oz.
cream cheese 8 oz. cool whip

Blend, then spread on top of first layer

3rd layer

(2) 6 oz. boxes instant chocolate pudding
3 cups milk

Mix well, spread on 2nd layer.

Spread 8 oz. cool whip on top, then sprinkle with chopped nuts and shaved chocolate.

Chill until served.

This one is amazing! It cooks in about 15 minutes, no joke. And all the veggies are fresh, so it's VERY healthy for you.



Bruschetta Pasta
  • 1/2 pound pasta, fettuccine works nicely
  • 2 medium sized ripe tomatoes, seeds removed and roughly chopped
  • 3 cloves garlic, chopped fine
  • 6 to 8 large basil leaves, cut into thin ribbons
  • 2 tablespoons olive oil
  • Kosher salt and fresh ground pepper to taste
  • Parmesan cheese, shredded

Cook pasta according to package directions.

Put tomatoes in a bowl with the garlic, basil and olive oil. Season with salt and pepper. Drain pasta, add to bowl and toss well with tomato mixture.

Top with shredded Parmesan cheese and another few grinds of pepper.

If you have Discovery Health, watch the TV show "Just Cook This!"

The guy on that show cooks in his own kitchen using his own stuff and does quick easy healthy meals. It's one of the best cooking shows ever!!!!

He has a website.... I'll go look for it....

Turkey Sliders with Grilled Red Onion
  • 1/2 cup red onion, diced
  • Olive oil
  • 1 lb ground turkey
  • 1/2 teaspoon fresh ground pepper
  • 2 teaspoons all purpose seasoning
  • BBQ Sauce
  • 6 small whole wheat rolls
  • Mozzarella cheese, shredded


Heat a non-stick skillet to medium and add 1 teaspoon olive oil and the onions.

Cook until nicely caramelized, about 10 minutes. In a bowl mix the turkey with the seasonings.

Separate the turkey mixture into 6 equal small portions and form into balls. Make an indentation in each ball and fill with some of the onion and a couple teaspoons of the bbq sauce.

Heat your grill to medium/high.

Close the pocket and form the meat around the filling to make a small patty and grill the patties until done. Slice the rolls in half and top with a little of the shredded mozzarella. Put under the broiler for a minute or so to lightly toast.

Place a patty on top of each and place the top on the bun, slice in half.

Makes 6 small burgers.

Well this one is interesting. Make it if you are looking for something unique. But I like it more as I eat more of it. It's just an odd combination of flavors.



Warm Cabbage Salad

  • 6 ounces any kind of honey Dijon dressing
  • 6 cups finely shredded Napa cabbage, about 1 medium head
  • One 2-ounce package "ready bacon", diced
  • 8 ounces white mushrooms, sliced
  • 4 ounces crumbles blue cheese

Place cabbage in a large bowl with cheese on top. Cook mushrooms in about a tablespoon of olive oil until quite soft. Add bacon.

Continue to cook both about 3 more minutes until bacon just begins to get a little crispy. Add dressing to pan, being careful as it'll splatter, heat through. Pour mushrooom-bacon dressing on the cabbage and mix well.

Season with a little Kosher salt and lots of fresh ground pepper.

Serves 4.
