I stopped at 3 P stores tonight. . . no one had the Beggin Strips, so I got rain checks. One didn't have Tidy Cat, so RC (I'd rather have a rain check for this, waiting on this Sunday's Qs), one didn't have OR Tender White popcorn, so RC. Looks like I'm moving the sale at least a month and I thought this was gonna be a slow week.

I help a lot of people get started... you can find out info at celiac.org..and celiac.com and here is some basic information I've put together:

Being gluten-free can seem like a burden at first, but if that's what you need to feel healthy, you won't miss the gluten containing foods at all.

Some people try to replace all of the gluten containing products that have been in their diets. I suspect the need for being gluten-free is also part of the universe's way of letting us know that high carb diets don't work for us either, so I don't try to mimic my entire pre gluten-free diet. That being said, I do have a fondness for certain foods (like pasta) for which I do have good replacements.

you can have any:

meat
chicken
seafood/fish
vegetable
fruit
bean

you can have certain grains:

quinoa
flax
corn
rice

you must avoid:

wheat
amaranth
rye
barley
spelt
hops
oats (some people find that they can add oats back into their diets -- but only those not cross-contaminated).

In general you have to avoid (unless it is a special gluten-free version):

Bread
Pasta (corn pasta makes a great substitute, rice pasta is good also)
Pizza
Cereals (bonus: Chex has several gluten-free cereals in regular grocery stores now!)
Cookies
Cake
Crackers
Soups with noodles (or soups that use wheat or unidentified "modified food starch" as thickeners)
Gravies or sauces that might have flour as a thickener
Sauces/dressings or foods that might have soy sauce as an ingredient or wheat or unidentified "modified food starch" as thickeners
breaded foods
Flour tortillas
Commercially sold arepas (they add wheat flour to them to cut costs -- real ones have no wheat flour)
Beer
Ice Cream (unless you read the label and it's okay) Sorbets are almost always okay.
Cheeses that have flour as a non-sticking agent or as an extender or as a mold start, no beer washed rind cheeses.
No other foods that have flour in them or might be contaminated by flour

Where you get into trouble is:

cross contamination and hidden gluten.

Even a few molecules of gluten can set off the chain of auto-immune reaction to the gluten, so you have to be very careful about cross contamination (i.e. don't eat french fries that have been fried in the same oil used to fry breaded foods). Don't use the same toaster, or the same butter (the one with the bread crumbs in it).

Hidden gluten is all over - from soy sauce to ice cream. Sometimes it's labeled as a wheat ingredient, often as "modified food starch". For that reason (and because I've always preferred fresh foods), I eat little in the way of prepared foods.. but, I do use prepared condiments -- like mayo and mustard and certain sauces. I recommend googling any prepared food you use along with the term "gluten-free" to see if the item is gluten-free -- if you're not sure after reading the label.

Anyone in DFW know where to find the Veggie Patch products? I want to use my free coupons but can't seem to find these in store. (Or if you've tried them, ler me know if they are worth finding.)

My niece was just diagnosed with it. Poor little thing, she will be turning three and is the same size as my 2 yr old and according to 'normal' he is kinda small for his age. She got so sick it was really scary, she just was not thriving or growing after she stopped nursing and no one could figure out what was wrong with her. Her tummy was so swollen and distended, she was finally so frail she stopped walking altogether and would just lie down all the time very lethargic. After over two weeks of her not getting better and still not walking the Drs finally admitted her to the hospital where they ran over a million dollars of tests (some very painfull too like bone marrow and such because they thought it might be bone cancer) on her and finally got Celiacs. It has been a month and she is doing AMAZING compared to being on deaths doorstep, she was literally just starving to death. She is back to running around and playing. She loves the gluten free bread, hopefully here real soon she will start gaining weight again and then starting meeting other milestones that she had fallen behind with like talking, she chatters and squeals but doesn't really talk, her parents had began teaching her sign language.

That is exactly how I felt the first day (with a headache as well), second day, I lived in the bathroom, today much better, still feel sick but much better.

OH and I should say..perhaps you are having sympathy pains?
