I don't even have mine yet. But back in January I went to a bike shop to look at one and realized that was going to be a problem for me. the top water bottle mount was about half way up the tube and the seat post was hitting it.

that last pic is blury but you can tell the water bottle bracket holder is too low to interfer

may be just loosen the screws but I don't think they should interfere unless you got an extra long seat post

I pulled the seat out and put it next to the bike

you can see the water bottle mounts are below the length of the seat post

there must be some other obstruction
loosen the locking clamp and wedge the opening open a little with the handle of a screw driver or piece of wood
dont drop it inside bounce

I'm 5'5" and I need the seat up at least 3 or 4 inches, so I cant imagine anyone needing all the way down

The first picture shows the seat as low as it can go and also the bottle water mounts. The second picture (tries) to show the post and how far it can extend into the bike frame. It would have been a better picture if my arms were longer and I were able to hold the camera, hold the seat post, and keep the dog out of the picture at the same time. But, it's clear that the water bottle mounts is stopping the seat post from going all the way down into the bike frame.

So are your bottle mounts higher than Gary's.

Also, What type of shifters so you guys have? Is it the twist grip or the little levers?
