also you never hear about people curdling their burritos and sour cream and lime are common ingrediants…


i believe it has to have a certain about on lactic acid to react with the itric acid and liquid cram has different ammount than sour cream

Ate big fat Grubs in the Philippines (cooked not raw) ... quite sweet, tasted like shrimp and dirt (lite on the dirt)

Ermm I'm ignoring you, right? Stick Out Tongue But you're talking about layering it on not mixing it together. There's a difference. And salsa and sour cream will not curdle, no. It's the lemon or lime and sour cream that will curdle. Try mixing the two ingredients alone and see what happens.

Yes, sour cream already has a certain percentage of acid in it which is what makes it sour, however, if you add more, it will still curdle. You can get it to mix, but you have to beat the ever-loving out of it to get it to conform. (This is where you come back and tell me you don't beat it until it submits, but then I would just tell you that you're happy with the lumps you see so we're back to it being aesthetically pleasing to you.) Big Grin

tomatoes are acidic and they dont curdle sour cream…


i am not saying they CANT cause it to curdle under certain circumstances i am saying that the chemistry of this mixture is such that it just doesnt happen…


perhaps its the order of the ingredients i dont know… all i know is that it tastes good and there are tons of recipes out there that include acids and cream and if it was making it curdle it wouldnt be there….

Try some of the Drew's Smoked Tomato Dressing, if you can find it. It's smoky like BBQ sauce but not as sweet. Hard to describe really but it's really good on salads. It's all DH will eat on salad.

Ugh, you must be talking about pork tamales made with the hogs head meat. I did that once and it was enough for a lifetime. The smell of that boiling hogs head is something you never forget.

It's been a while since I've had it so I got the bottle out and tasted it. That's right, I ate salad dressing by itself. Crazy laugh out loud

The two strong flavors are smoke and vinegar, that make a smoky, tangy sharpness. Don't know if you've ever had BBQ with the thin vinegar style sauce but that's what it tastes like, a creamy version of the vinegar BBQ sauce with the smokiness of the meat thrown in there.
