Charlotte got our light dusting of snow this morning, then it melted away quickly.
Country ham (salt cured) biscuits with red-eye gravy this morning, and coffee.

Red-eye gravy is made from the pan drippings left behind after frying the salt-cured country ham. It's VERY salty, so no extra salt is needed in the gravy. The ham is also very lean, so after cooking I added a tablespoon of butter to the skillet, then a tablespoon of flour. This makes a roux, to which we add a few splashes of strong black coffee. This deglazes the skillet and makes the gravy. Add a little fresh-ground black pepper, a shot of Tabasco sauce, some water (and maybe a pinch of sugar) and boil/whisk until smooth and thickened.

Bingo! Red-eye (morning after wake-me-up) gravy.

It's fairly simple, and literally dirt-cheap. It represents the economical mindset of Southern cooks who refuse to waste any by-product of the cooking process. Why wash away that goodness when you can stretch it into a delicious gravy, instead? Served over biscuits, potatoes, grits, or even rice, it's delicious.

Could you use the stuff left behind after you fry bacon, instead? Maybe dump off 1/2 of the grease and use the scrapings?
