I cook my old fashioned grits similar to how I cook rice, except the ratio of water to grits is 4:1. I bring them to a boil, stir them well and turn them off, leave them covered for twenty minutes, then stir in a 1/4 cup of half-and-half and a cup of cheddar cheese.

I've never measured grits. I just turn on the faucet until there's as much water as I want. Then I dump the grits in until I think it's enough. Roll
