Possible if you can find a limiter that fits. I recommend you contact the manufacturer. They probably have one or can point you to one.
Resistance heat is COP of 1. With your 1.2 kw array in full sun that's about 4000 BTUs assuming 100% efficient inverter. A heat pump with 4 COP would be 16,000 BTU. Keep in mind 1 BTU is what it takes to raise 1 lb of water 1 degree. So with water at 8.6 lbs/gal and 20k gallons you're at 172,000 lbs, or 172k BTU/hr to raise 1 degree F assuming no losses to the environment. Using your solar array with 4k BTU resistance heat would take about 3 weeks to raise your pool 5 degrees with 10 hrs/day of full sun. Probably not noticeable.
I spent a few summers on fire crews and we would have killed to have access to something like this. The bigger fires had shower trailers , but a lot of the smaller ones didn't. I suppose you could call us "so Chicken" for wanting hot shower after a few days of cutting line and mopping up, but to each their own.

For a 20-25k gallon pool, this would heat it approximately 1 degree a day if running continuously. It would also burn 2 full 20lb propane tanks a day. If your pool isn't covered, you will likely lose temp overnight. I bet you'd gain 5 degrees at most from continuous heating over a couple weeks and 25 bottles of propane.
