Beginner needs help choosing which compact camera to buy!

Hello everyone. I am looking to purchase a compact camera in the range of $600-$700. I see some good options that had good reviews on some websites. I am a beginner with camera's and don't have much knowledge with them. So a simpler camera to use would be a big plus. I have a newborn and this camera would be used mostly to shoot him and my wife would love to take nature photos outdoors. So what I would think I am looking for is a simple, point and shoot ready camera that offers great quality pictures.
Some options I have found in my price range are:
Sony RX100 lll, Panasonic Lumix LX10 or LX100, Panasonic Lumix ZS100, Nixon Coolpix P900, Canon G7 X Mark ll.
Those are the best options I could narrow it down to myself, unless someone can mention anything else that could possibly be better.

I considered similar Nikon models, and also considered spending too much money on an RX10. Spending that much money, I'd prefer something with changeable lenses for more options.
There's a good, solid reason why the point-and-shoot camera industry is dying.....why bother with a point-and-shoot when your camera phone can give you comparable pictures?
As others have suggested, I think you should consider a decent DSLR. The Canon SL1 can be had for about $375 or less. If you add a decent lens to it (Sigma 17-50mm f2.8 which sells now for about $375 too), it'll give you great pictures that I don't think any camera phone or point-and-shoot can match. So, that'll still be close to your budget of $600-700 dollars.
That being said, when you want a really nice picture, the DSLR is nicer than the cell phone.
Oh, check out the manufacturer refurbs. I have had a lot of luck with two different Canon refurbs and they fit in your budget.
This is right in your price range, and has a great all purpose lens (I recommend something like this rather than the 18-55 and 55-250 combo as it is one less thing to carry around.)

A SLR does not have to be complicated to use but will offer more flexibility this kit offers a bit more for less $$ the refurbs I have purchased have always been fine too!
