Traveling to New York

In April I will be going to the USBC Open Championships in Syracuse. Afterwords, my wife and I are planning to go to NYC for 2-3 days. Plane tickets and hotels will be free from cc sign up offers on amex delta cards and chase ihg cards. We are from MN, know nothing about New York, and will never go back again. I was thinking the Staybridge Suites in time square, as I have about 40 k pts per night for 3 nights available for this leg of the trip.
Few questions...
Car rental the best option to go from Syracuse to NYC?
Staybride Suites in time square seem like a reasonable option?
Besides seeing a Broadway show, central park, and trying some pizza...what other things should we consider? Tourist stuff is fine, or a local rooftop bar would be cool. Our
twins will be 2.5 at that time, and we have never been away so it will be fun no matter what... we are pretty simple people.
We are not interested in any day long activities, or things that take extensive traveling, etc.

When my wife and I head down to "The City" we only really go to the Time Square/Broadway area to see a show. Other than that most of our time is spent in other areas.
Comedy Cellar in the village when you get to NYC.
In NYC, if you're into museums, they have plenty of places that you can pay $1 admission and get in because they suggest you to donate $15 per person but you don't have to.
I love going to NYC to eat. If you're into foodie stuff, it's like the foodie heaven basically. We keep wanting to try new things but always end up at the same restaurants. But if you can, try the cart version of the Halal Guys on 53rd and 6th. The restaurants are good but the carts are still the best. They also have a waffle cart near Central Park called Waffle and Dinges that make good Belgian waffles. They also just opened Hot N' Juicy, a crawfish boil type place, my next trip there includes this restaurant.
Visit the Empire State Building, and go up to the observation deck for a spectacular view.
Take a tour of NBC Studios.
Go to Times Square and just walk around to observe the sights & sounds.
If you like cheesecake, Junior's Cheesecake is GREAT.
Take a double-decker bus tour of the city.
There's tons of great restaurants, pizza places...it's endless.

I wanted to do the 30 rock observation but the price was too much for a view.
I enjoy the states island ferry, it is a free way to see the Statue of Liberty and to have a nice boat ride. The Oculus at the wold Trade Center site is a marvel to behold and a walk across the Brooklyn Bridge can't be beat. All three are near each other and can be done in half a day.
All kinds of museums and amazing architecture, great window shopping along fifth and madison avenues, if Broadway's isn't your thing, then perhaps a performance at one of the theatres at Lincoln Center. And don't forget there are four other Bourgogne in addition to Manhattan that all make up New York City.

You can do quintessential touristy things or go off the beaten path, but rest assured, you'll have a great time.
Thank you very much I appreciate it, its touch because I want to do a lot but at the same time I don't want a schedule as it makes it feel less like a vacation. More replies are always welcome, I have more researching to do!
I just Googled: odd things to do in NY and a plethora of interesting things came up. If you have time, Ellis Island might be interesting.
