I have this non-touch laptop from the previous deal at Fry (same price as this deal).
Some of my thoughts since I got it for a few months.
Pro: super light- you will be amaze at how light a sub 1kg laptop can be
Pro: user upgradeable ram. It has one empty slot though it is harder than my other laptops to upgrade (I couldn't fully remove the bottom panel)
Pro: I believe it can be charged via USB-C- did a ton of research to verify but I ended up just buying another power brick instead of USB-C charger + cable due to cost
Pro: very quiet unless you really stress the machine
Pro: MacBook like battery life
Cons: can't expect power machine performance from it
Cons: not very good touchpad (can't compare vs Mac)
Cons: if you are used to solid screen like MacBook (made of aluminum), you will find this screen flimsy due to magnesium alloy construction. I have a Sony laptop made from same material so the flimsy screen does not bother me. If fact I think flimsy screen can protect better due to flexing ability during drop. Flimsy screen will probably bother you a lot if you get the touch version.
8000 i5 gives a real upgrade, 4 actual cores.

How is LG's quality compared to Dell? I haven't had exactly good experience with the latter, but I've only gotten dirt cheap devices from Dell in the last several years...

Depends on what you plan on using this for. The average user probably won't do processing intense tasks, should be just fine for web browsing, office, video streaming. The built in camera supposedly sucks, for those who like to Skype...
Yes we all know that 8250U is substantially better than a 7200U. Like previous poster pointed out, not everyone is a power user so don't need it. Let's not derail this thread into a discussion about how the 8250U can run macros on a 65,000 line xls so much faster . If you want this laptop with a 8250U, it is going to cost more which isn't worth it for many users.
