The chuck steaks are pretty tough if not marinated and/or braised. Also, cooking as a "pot roast" in the oven or crockpot for several hours would help if you wanna go that route.

I've loved all the cuts I've gotten. I had seen some of the fattier ones, and the really bad ones I left behind. While I like the taste of the fatty stuff, and supposedly it helps make the meat moister/more flavorful, I don't want to consume it... Anyway, I've dry rubbed and/or marinated the steaks and thought they grilled well. The roasts turned out great, but I cook all my meats real slow and on low heat - well seasoned. You can even look into seasoning the meat for several days before cooking - maybe even aging it if you are adventurous.

As for using in stir fry - I cut up some of the chuck steaks (fairly thin) and cooked in my wok with some Italian dressing and soy sauce. Turned out great all 3 times. Slightly chewy once because I cooked it a bit long, but not unmanageable for eating. I thought all the cuts I've gotten so far have been great.

I kind of wish I had a meat grinder - then I'd try my hand at some hamburger!

Then it occurred to me that it might be b/c of KM doubles. Dontknow

If anyone has any that they'd like to trade pls. PM me. Of course now that I've posted this anyone with any brains will probably go sell them on Feebay, but oh well. Rofl2
