For your application, the extra cores of the 2700x will be more useful.
So I would say 2700x better than 3600 for you.
For a gamer, the 3600 would be better... at least in current games.
Future games will be coded to actually use 8 cores, as the next gen consoles will have 8 core cpus.

2700x vs 3600... They are ROUGHLY 10% difference in price atm AND 10% difference in performance.. (3600 being better and more expensive right now)
So it's a question of cores. If you need the 8/16 then I'd get the 2700x. If you just play games or casual stuff, get the 3600.

Now... The games being 'coded' for 8 cores.. that's a little ignorant.
Console games are optimized for their hardware(i.e. 1 single spec list.) PC games are.. "optimized" for a HUGE range of hardware.
We won't see 'this game supports 8 cores cuz ps5 and Xbox(whatever the name is) have 8 cores'
