With that note if you guys want an Apple Watch stand alone device you can activate the line on different carriers. When going through the setup process on the Apple Watch select that you are setting it up for a family member. After that the watch will be setup as a family member and can be used by itself.
Only Apple Watch SE and Series 4 and above can do this.

This is what I'm looking into. You still need a T-Mobile plan on the iPhone esim from the carrier from what I've been told, since the phone still has to number share to the phone to work.
One has to wonder, though, if using the simultaneous ring feature (which can ring any number when a call comes in) might work. I suspect that it would work just fine. Perhaps the issue is that when a call comes in and you have your phone and watch, the phone triggers vibration/notification on the watch. If you have simultaneous ring on, the watch will receive a call on your phone at the same time it is receiving it's own call. But that could happen even if your phone/watch are on the same carrier and someone calls your watch. Hmmm.....I have to try that.
For outgoing calls the watch first tries to use your phone through bluetooth or lan(?) and then tries cellular. That should work irrespective of carriers.
Net....I don't technically understand why Apple states that watch and phone have to be on the same carrier.

Not possible. You have to have service on the same carrier for both. The watch won't have its own number. It basically spoofs your number for the watch
