Years ago, I built my own sous vide machine by buying parts (thermostat relay, plugs) and assembling them into a box, and connecting to a single-coil portable stove. It's worked fine for me for years but it has limitations. It only works in celsius, is only about 1-2 deg C precise and doesn't have a circulator. One nice thing about my setup is that I can put a normal lid on the pot, though I have plenty of plastic wrap.

This is certainly tempting.

I have this, don't bother, go for 1100w version. Don't get anything under 1000w for sous vide.

Just kidding, I see your point. I usually do not bust out my SV unless I'm cooking for at least 4 or more ppl and while I have a Zojurishi water boiler always on standby, I haven't tried starting with hot water. But if you're in the SV game, you're usually probably going to cook for quite a few ppl eventually?

Seriously, it's usually just two or three of us so, yeah - we've never overloaded a pot. I suppose if I were cooking for a big party I'd probably just jerry-rig it to the side of a cooler and set the lid on it. Keep the evaporation losses down and I'd be surprised if it still wouldn't hold temp. :-)

It seems like everyone is looking for enough power to reach the initial temperature but you can always heat the water on the stove or kettle first then use your immersion circulator to merely maintain the temp.
I've cooked multiple racks of ribs in a big cooler with nothing more than my Anova keeping perfect temp.

I agree, I never understood why people look for more power other than just to say they have more power.

I always heat up the water on the stove because that will always have more power than my sous vide.

I think I calculated it once and you only need about 200W to maintain temps in a stock pot.
If you use something insulated like a cooler its prob less than half.

I'm more interested in how accurate the temperature sensor is and if it has a good PID control circuit.

I typically fill the first 3rd of the vessel with plain tap water then dump boiling water in the rest of the way up. Usually comes out pretty close to where I need to be. No need to get it perfect on the stove top.
Takes a LOT less time and energy to bring a lot of water to cooking temp.

Oh I just heat the entire vessel with all the water up to whatever temp I want to maintain. Then stick it on my sous vide heating element.

With the new device, I figure I just put it in.

The nice thing about my current setup is that I can put a regular lid on and I can use any size pot.

With this new device, I guess I'll have to use plastic wrap or Al foil for a lid and maybe use a slightly bigger pot, but at least it will be less klunky.
