Seriously, it's usually just two or three of us so, yeah - we've never overloaded a pot. I suppose if I were cooking for a big party I'd probably just jerry-rig it to the side of a cooler and set the lid on it. Keep the evaporation losses down and I'd be surprised if it still wouldn't hold temp. :-)

I always heat up the water on the stove because that will always have more power than my sous vide.
I think I calculated it once and you only need about 200W to maintain temps in a stock pot.
If you use something insulated like a cooler its prob less than half.
I'm more interested in how accurate the temperature sensor is and if it has a good PID control circuit.

I typically fill the first 3rd of the vessel with plain tap water then dump boiling water in the rest of the way up. Usually comes out pretty close to where I need to be. No need to get it perfect on the stove top.
Takes a LOT less time and energy to bring a lot of water to cooking temp.

With the new device, I figure I just put it in.
The nice thing about my current setup is that I can put a regular lid on and I can use any size pot.
With this new device, I guess I'll have to use plastic wrap or Al foil for a lid and maybe use a slightly bigger pot, but at least it will be less klunky.
