Now, I don't know how much time you have to watch TV, but I could never watch all the content that many services have to offer every month, so I would never subscribe to that many all at once (unless they were on sale for $1/mo like they are now, lol).
Since my original point was that this a la carte system is better because you don't need to pay for more content than you could possibly watch anymore, it doesn't really make sense to compare a la carte prices of everything you used to watch w/ cable, but even if you do, cable would definitely charge you more than $26.96 + tax with all their sales/sports/broadcasting/regulatory taxes and equipment rental fees, and you'd still have to watch way more ads.
I think you're looking back on cable with rose-tinted glasses a bit. Also, cable is still there, ready to gobble up your time and money if you really like it more than streaming.
Hulu also starts to stink for live TV -- they lock you to your provider. Guess what happens when you have 2 providers
I basically look at my cost of old phone, internet + tv with some premiums to compare against streaming services . . . as long as it's cheaper or better, I'm good.

What *I* would like to see is a provider that lets you group households with some overlap and just be straightforward about the whole thing. How much better would it be if some of us had an admin account for your parents/grandparents that you could adjust from one place?
The only problem is it's all race-to-monopoly with very little consideration to the quality. Even discovery plus came with missing (current) shows and an app that you can't delete items that auto-played accidentally :/
At least Amazon Prime Video manages all your Channels subs in one place, if you get them.
