Ummmm... The second one is a bona fide classic In Sci fi and features one of the best screen villains of all time.
The 4th one offers something to everyone as it's a star trek fan favorite but also works well for non fans. It's theme is still current and it's the funniest of the batch.
Now into the first one. It can really drag but is well done for what it is. The director was forced to stop working on it due to an accelerated release. He was able to finish it 20 years later but that version is not in this set. But the version included here is still a fan favorite but is more for fans of 2001 a space odyssey and not Star Wars fans.
The third installment is just an average film. Not great but also not bad.
Now the 5th one.... Well let's just say it would be more exciting to watch its director blast off into space than spend two hours watching that installment.

The first one is a piece of dog doo by any fair assessment. You can make whatever excuses for it wrt the director and the timing, but it is still a long, stupid story not well executed. Is it better than 5...sure. Is it worth watching a second time or paying money for...no way imo.
Outside of the 2nd film, none of them are what you would call tremendous. The 4th one is amusing at points and OK imo. The 3rd one is OK as you noted. Just don't see why anyone would pay 50 dollars for this set in 4k. 1 really bad film, one very good one and 2 mediocre ones and outside of the 2nd one, you likely will never watch them more than once. Add in that they have all been available in HD for quite some time so this really only appeals to people who want to see the films in 4k.

It is clear you are not a fan of the original cast, whom this set is for. If folks want to discover these films they are in constant rotation on several digital and cable outlets.
So in other words it will be a rare case where people who haven't already seen these films and enjoy them will be interested in buying this set. The brief 'reviews' I posted are a general consensus of original cast star trek fans of the original films. Obviously everyone has their own review and opinion of each film. I've seen a few folks who love and defend 5. That's fine.
But if folks are fans of the first four films already this is the current definitive quality release of these films and at 50 bucks for both a 4k set and a BluRay set with 4k digital codes it's pretty future proof and a great deal. And that is really what this thread is about. Not taking pot shots at movies you clearly are not a fan of.
