When you add in the value of the extras you essentially get a free $10 case and $5 screen protector. I think the Switch + Mario Kart bundle at Target for $299 is a better buy for people looking for the non-OLED model.

I have the OLED. It's not worth it unless you do most of your gaming in portable mode. This is a good deal on an item that is often sold out given the ongoing supply chain issues.

That's why I want the OLED, I am mostly a mobile gamer. Any one know where to check often for in-stock oled models?

If you're a little bit technical (no need to code but can do some terminal/command line and get around GitHub) I've had success with StreetMerchant. Otherwise, search Google for Twitter or Discord "Switch OLED drop alerts." If you're feeling lucky, Target.com has them most often early in the morning (like before 7 am) for store pickup.
