But this northerner has a twist to make it even *more* unhealthy.
Anyways, while the rice mixture is cooking, prepare a box of Jiffy corn bread mix, or the small cheesy garlic Bisquick pouches cheap AC at T, or any kind of biscuit dough.
When the rice is done (or even just a bit early), transfer into a casserole dish and smooth out the top. Pour the biscuit mix over the top of the rice. Pop into the oven and bake til the toothpick is clean (or a little less than the box directions
You might want to make the rice mix with a little more liquid if planning on topping, though. The oven will dry it out a bit, so a little extra can help keep it moist.

I will try attaching a pic of the ziploc totes, I think they are great! But I do think they are over priced...they could have at least made them 2 packs.
I love them for storing my kids clothes under their beds. (i buy things when on clearance in the next size up) cause you can smoosh them to fit and form to the space you have under there.
