The conundrum is that much of the services are now asynchronous (runs in the background) and it takes 4GB just to keep Windows 11 running from startup.
The real question is whether a Windows laptop will operate well in 2-3 years on 8GB as more background services are coded into the OS.

If in need of heavy VMs, possibly you should look to upgrade to 16GB at least, but other than that, is very competent.
The Surface Pro 8 has a cover in the back that you can remove to upgrade the NVME hard drive yourself. You just need to buy one that has the same form factor that it supports, which is a 2230 NVME. I myself upgrade to a 512GB NVME that I purchased separately for a lot cheaper than if I purchased one that was configured with that size. You can even buy 1TB drives to upgrade with.
8GB memory it not bad, but if they offered 16GB RAM with 128GB configuration at a reasonable price, I would have ordered that one instead.
It doesn't. But you can use any keyboard you want. Heck Microsoft sells a cheap wireless Bluetooth keyboard that looks like a surface keyboard for cheap called the designer compact keyboard. Pair it with a mouse or use a pen or touchscreen. I use this keyboard when I need a keyboard but don't want an attached keyboard (like when I'm drawing art, I occasionally need to press a key but I don't want the surface keyboard in the way).
Also, be advised that you cannot turn off the power-saving backlight dimming in battery mode. This is the kind of thing that Intel mobile graphics does depending on screen contrast, not ambient light. Nobody has found a *working* way to turn this "feature" off yet.
I haven't seen this screen contrast problem in windows 11 on my Surface Pro 8. I did see the problem in windows 10 on my Surface Pro 2017.

MacBook air doesn't have pen support. It doesn't have a touchscreen. It's a laptop that doesn't run windows well.
Take it for what it's worth, but that's my real world experience. I'm sure if you are using your computer for heavy graphics and video you may have a much worse experience. I just don't need that for my work.
8GB is no longer the sweetspot. However 8GB still runs very well for most situations, even with VM. Somehow people are trying to say 8GB is the new 4GB when it's not. We're still running some 4GB surface pro 4 machines as input devices for patients to type and sign forms at our medical office. Now 4GB is pushing things (the surface pro 4 machines are stripped down to Drawboard Pdf and Edge).

How easy or hard to replace hard drive or should I say ssd?
If you need the 2-in-1 design plus pen support then this, for anything else go with the MacBook, it's actually cheaper and raw performance is much better with M1. MacBooks last a long time, whereas Windows laptop hardware doesn't age as well with Windows updates, Apple has track record of supporting older devices effectively.

Not true for everyone. I've had my surface pro going on 4 years and kickstand works as good as day one.
