I am not sure exactly what your question is. You said that you wanted to buy a iP11 from Metro to trade in at Best Buy.
(Transaction A) The Metro iP11 deal is as follows:
Option 1: Buy iP11 from Metro, pay for 1 month of Metro phone plan at point of sale, and don't pay for any further Metro phone service. In this scenario, you will NOT get a $50 gift card from Metro.
Option 2: Buy iP11 from Metro, pay for 1 month of Metro phone plan at point of sale, and pay for 2 additional months of $60-per-month Metro phone service. In this scenario, you will get a $50 gift card from Metro.
If you are buying the iP11 for trading-in at BB, then go with Option 1. There really is no reason to go with Option 2.
(Transaction B) The BestBuy deal is as follows: (see BestBuy post for more details)
Trade in iP 11 toward a iP 13 (T-Mobile version) at BestBuy. There is an instant $100 off here.
There is no BestBuy gift card in either deal. So, I am not sure what your question is. However, if you already have a BestBuy gift card from some other source and you want to monetize it, you could use your existing BestBuy gift card to pay for transaction (B) above.

In Option 1 - can i still unlock the phone after some time?
If i trade in the iphone 11 at BestBuy i will get a gift card of BestBuy correct. I want to know if there is a way to convert it to cash or anyway to convert it to another gift card so that i can use it somewhere else.

Samdiv, if you are planning to trade in your new iP11 at BB to get a BestBuy GC, you should look into the gamestop offer. I have not personally traded in anything at gamestop so I can't opine on it.
As for the unlocking, several people on this site stated that the Metro iP11 would unlock after 180 days ... even if you pay for only 1 month of Metro phone service.
Is there a limit on the number of phones you can submit? I have six i8 phones I should get rid of.
There have been scattered reports here and there of people managing such a feat, but... by and large, the reps will open the boxes, insert the SIM cards, and activate the phones right in the store.

There have been reports of users trying to use the cards and it being emptied within minutes of leaving the store.
It is advised that for example, you put the gift card in your amazon cart and as soon as you get the Visa card, buy the amazon gift card in order for a customer not to be out of the Visa card money from gamestop.
