The reason why other devices (e.g. Garmin or Mi Band) are able to run for 14 days between charges is because they don't deliver the same functionality and offer a more basic user experience.

Also would get this if i was new to apple watch and wasn't sure if I wanted to invest in a brand new one, i'd get this
I've had one since series 0(had 0, 2, 3…have 6 now). Can't live without it
The best I've found that actually works is Visible Wireless for $5 a month, but it also requires the phone that the watch is linked to be on Visible as well. Also Visible only allows one cellular watch per user.

In that case, you're probably not a good candidate for Cellular, but you're not required to activate it. You can keep the watch "dumb" and just tether it to your phone which is what 95% of Apple Watch users do, anyway.
I just bought an SE with Cellular, my plan is to activate it once I really need it (for example, lending to my kids so they can stay in touch without a phone, or once I start doing longer trail runs and don't want to drag my phone along).
