In my experience the ones that rapidly become valuable sets are the ones with movie tie ins as those have a very short run. The Harry Potter Lego sets are now worth $$$$.

I've had the label slapping issue on various larger items (not just lego) with Amazon, Target and Walmart. A possible workaround is to label it as a gift during checkout and add a free gift message. It's free and usually they add a piece of paper in the box with your message so that would preclude them from just slapping on the mailing label.
