Can I use this with an existing router so these become just Access points? Asking as the modem is one of those router/modem combo

I don't know the answer to your question, but I would log in to your router/modem and see if there's an option to just make it a modem only. That way you can use the router in this deal as intended.

If you're setting up as a mesh network, you need to use one of these as a "home" router. You can .... bridge to that one from your existing router if you need to....

Yes you can. I have the Deco M4R 3 pack which is almost identical to these, and I've been very pleased with them. I set them up with ethernet backhaul and use a pfSense main router. You of course lose some of the routing functions like QoS and firewall settings.

You need a modem ".( a modem is required for most internet service providers)" and setup "connect Deco to your cable modem & turn on both"

With more and more smart devices, does it make sense to invest on ax mesh? Not sure why one should buy ac routers apart from the extra 100? Ofcourse 100 is a huge price, but any reason to buy old tech?

This is Wi-Fi 5, while the AXE5300 uses the latest technology Wi-Fi 6E. The next generation of Wi-Fi will be Wi-Fi 7.
