It is my understanding, though, that as the books get longer and more mature in narrative, that the illustrations become fewer and farther between. Starting with Goblet of Fire, I think. So keep in mind that will likely be the case with Order of the Phoenix, too. Still, thumbs up for a solid preorder price on what is sure to be a very well made book.
Edit - not related to this specific book, but I picked up the illustrated Sorcerer's Stone edition for $13.97 from Amazon back in late 2020. So this may indeed drop to a much lower price, albeit in the future.

I'd say you're not really wrong, but these are exceptionally well done. I got the first one (it can be had for well under $20 often) to read with my 7yr old and he loved it. The artwork is really well done. If considering reading to a younger audience, I can't recommend these editions enough.

Those are great too but they only have the first two books so far. I've been waiting forever for the other releases.

Harry Potter is the only book series I own 3 editions of. The original hardcovers I purchased as they came out, the illustrated editions, and the MinaLima versions.
