Sorry if this is a dumb question, but I just got a PS5 and haven't really looked into it...
The PS5 already has a 825gb SSD installed. Does this perform better than the existing one? Also, is this meant to replace it, or is there an extra slot for expansion? Thanks.

Have one of these in my PS5. It's fine. Hard to gauge speed vs the onboard nvme, but it seems plenty fast game wise. I should have held out for the 2tb though, 1tb fills up really quick. Games are just stupidly huge nowadays. Even with an external drive for the PS4 games I find myself juggling for space. Games like COD and Destiny 2 are just huge.

If it's digital, I highly recommend getting a (unsure of this brand) 2TB ssd. Even with disc version, I'd get the 2TB when on sale.
I ran out very quickly (some games take up 150gb+)… and I did not realize the PS5 takes only one extra SSD until after I bought 2 1TBs. Plus, it's a huge pain with the transferring of games to external hard drives that will not runPS5 games and back to a next gen system.
For me 1TB is good enough, usually when i finish a game i don't play again.. but I'm concerned about the Heat sink if it good enough for ps5
The heatsink is really more of a heat spreader… it's just a thin piece of aluminum with conductive tape; no fins or anything like that. It has been fine for me but I keep my environment relatively cool so it sort of depends on your ambient air temps. It takes it down a few degrees maybe but that's all you need to prevent thermal throttling.
You can get a "true" heatsink that will fit for less than $10 on Amazon:
Other options are to get a slightly taller heatsink and leave off the door for accessing the drive to accommodate them, but you'll have to Google for specifics on those.
Is this more of a budget brand for PS5 compatible SSD's?
ADATA is a "budget" brand in the sense that they don't cost as much as Samsung or Western Digital drives but in general they're decent.
As with anything, you'll have people who love them and people who say avoid them. The Western Digital Black SN850 without heatsink has been similarly priced lately and I would 100% buy that one and add a $10 heatsink given the choice.

Or kingston kc3000 series.. ongoing 10% sale or coupon code
This is not a budget brand. Adata is well known for their SSD's.
Its a budget brand. I bought a SX8200Pro. It died after 4 months. The replacement had inferior components and was much slower. They swapped the controller and the NAND but kept the same name. Thats the sign of a budget brand - they cut corners and cheap out on components.

That particular one ADATA was found to have used a "bait and switch" tactic because they didn't indicate changes to consumers.
Historically speaking, that's not a practice limited to just budget brands (even Apple and AT&T are guilty of it). But usually once a brand gets caught, they account for it by rebranding or updating the model number if there's a significant change in components or controller:

I just got a heatsink that will replace the PS5 stock metal cover. Sabrent was a popular one (and had reviews on YouTube) but this came out more recently and looked like it had bigger fins. Plus I know Silverstone from PC cases.

But I'd still buy the WD Black SN850, especially since one of the the head engineers of the PS5 personally recommended it.
