you're right about the number of layers, basically all you need is an inner, outer and middle layer. even with the 7 layers, iirc the aluminum core is 2.4mm thick which is thicker than any competitors entire pan.

this is their step down line, Atlantis is the top. still a great set that is thicker than most if not all allclad (it's been a while since I've researched this, once I bought my Atlantis a few years ago I stopped looking to buy new cookware)

So look. I'm not here to argue that All-Clad D3 is better. It's not. But you are the one who said "if you're serious about cooking it's a night and day difference."

If you're serious about cooking, then you know how to clean your pans, and don't really care that the edge around the rivets darkens a bit.

If you're serious about cooking, then there's no chance in hell you could warp an All-Clad pan, either. I mean, Lord knows members of my family have tried without success, as have the testers at places like Cooks Illustrated.

If you're serious about cooking, you know that there's a always a trade-off between thermal conductivity, heat retention, evenness of heating, and weight. A Demeyere Atlantis 12.5" skillet weighs an entire pound more than the All-Clad D3. Those two lines should not be compared. There are advantages (and disadvantages) to lighter weight pans.

The Silvinox coating is a unique advantage to Demeyere. And you didn't mention that Demeyere has sealed edges which makes it more dishwasher safe. Those are meaningful differences for some people, if not night and day.

Finally, if you're serious about cooking, you're probably not buying your pans in sets.

People might be ok with it since it's dishwasher safe. As for holding it while cooking, it's mostly just applicable to the skillet, right?

Bought these on a good sale a few years back.. It is a small thing, but really wonderful to have welded handles. Not needing to clean around the handle rivets is nice.

Looking at the pictures, doesn't the weld bump make the same type of corner that is hard to clean?

As for thickness - at at certain point, adding more thickness doesn't really impact cooking. Not sure I've heard anyone complain allclad is not thick enough.

no, they're perfectly smooth on the inside. and as for the thickness, it depends on what you're doing with it. making an egg? not a big deal. adding a cold 1.5" cut of meat to the pan? big deal

Agree with what a lot of others have said, these pans really are just a cut above. The brand makes stuff of the kind of quality that's hard to find anymore. I lost my affinity for all clad when I bought my first demeyere. Wish I needed more cookware so I could convince myself...
