I might be in. I can cook fried eggs with no problem in my carbon steel, but failed miserably with scrambled eggs yesterday.
Have you seasoned carbon steel and do you know of seasoning allows it to come close to the performance of professional nonstick substances in cooking stuff like scrambled eggs?

I'm definitely no professional, but I did season it twice with oil and put in the oven. I only have one carbon steel pan so it's new to me, it has been non-stick for the most part but I really only use it for searing, cooking chopped veggies, and fried eggs (never had issues with fried eggs, and I make 4 at a time).

From reading on the internet after I failed with the scrambled eggs, I learned it's not so good to use carbon steel and just stick with a non-stick skillet for that (or eggs in general).
