Saw a deal on here for this knife in 10". Figured some of you might be interested in the 6". Not a major discount, but hasn't been down to this price for a while.

Just kidding. I love my Vics. They're more knife than the vast majority of people need. I've got a decade and some change of professional cooking under me and I've spite of having some nice, expensive and beautiful steel in my roll, my 8" Victorinox chef's knife is what you're likely to find in my hand, at work or at home.

I'm not sure if I have the 5 or 6 of this knife, but it's my wife's favorite knife. I like it quite a bit as well, especially for tasks where a deep belly isn't really suitable.

One thing about Victorinox knives is they don't have amazing edge holding ability. The upside to that is maintenance is fast and incredibly easy, and it's a great knife to learn how to sharpen by hand with (it's so easy, don't be scared!) A coarse stone will make quick work of any chips or nicks in the edge. The steel isn't quite as brittle so if you drop it, you're less likely to break it.

That said, this isn't a fantastic deal, it's just about what it runs normally.
The 6" has a good personality, and really it all comes down to how you use it

I find mine holds an edge pretty good. You should run it across a steel now and then to get the edge back in line. That helps a lot. And it's also a pretty thin knife, so even when it's not sharp it will cut pretty good compared to a thicker knife just due to less drag.

Yeah, it's really fine, just not anything to write home about. I just find they need touch ups more often than some of my other knives. Just a honing for the most part. It's quick and easy. The average home cook may not even notice. At one point in my career, my 8" was chopping more than a ton of onions a year, on top of everything else.

FYI and FWIW: Victorinox no longer makes the Fibrox line. It has been replaced with the Swiss Classic line.

Right, it's not a proper chef knife - but for most practical purposes it works great. Can do lots of versatile cutting with this 6" Winco.

Yeah, we have the one with the wave edge, paid about $30 last year. It's really sharp, and can cut semi-frozen chickens.

The downside is when it becomes dull, it's very difficult to sharpen it. We only use ours mostly for meat these days.​

The 8" knife is taller which helps with chopping. The 7.5" is more a utility knife I think. Pretty much the same knife though.

I have both this knife and 8" knife. Ever since I got this one I rarely use the 8". It's just too big, imo. I'm not a professional chef, but I can't imagine where I would prefer a big 8" knife over a 6" one aside from cutting up a big hunk of meat. You just get so much more dexterity with the 6".

I really like this knife. Definitely worth picking it up. It stays sharp enough, and if you just use a honing steel or (if you want to be fancy) a whetstone, then you it gets right back to the where it was.
