Tomato paste makes the most sense as a concentrate that will enhance veggies or sauces, so you usually only need a small amount. If you aren't cooking a large amount or just want to smack a tablespoon into something, opening a can and preserving the remainder is frustrating, whereas a tube will let you use small amounts and last a long time in the fridge.
