As far as lack of lip, also par for the course.A few bumpers have slightly more lip, I have a set of rep sport bumpers that do but they barely add enough so that it's easy to pick up off the ground.
Also, I think 370 lbs may be overkill for me. So debating between 160 and 260lbs. Haven't used more than 180lbs plus bar for deadlift. So I guess 160 should suffice at least to begin with.

If you plan on having more than just a super basic home gym setup, then I would recommend investing the most money into your barbell; after all it is the thing that you will constantly use basically all of the time. Some recommendations would be:

I only do powerlifting lifts so I'm only dropping at deadlift height. Olympic lifts would need bumper plates.
I haven't had issues with deadlifts with iron, but I'm lifting on stall mats.
Urethane is encased iron so, you're right about it not being dropped from head height.
rep does have rubber coated Olympic plates.
