It's a hobby. Like all hobbies, there are many people who spend a little or a lot of money to satisfy their desire to collect or experience their hobby in different ways. Some people spend thousands, tens of thousands, hundreds of thousands on watches, cars, cologne, purses, clothes, shoes, perfumes, knives, PC/consoles/games, etc. They don't need to be rich. They just need to budget out a portion of their income for entertainment and for their hobby. People who love music are no different.

Don't get me wrong, every product industry has its snake oil but to blanket claim that $2700 headphones has no perceivable difference as a $300 one is ludicrous. Your sense of hearing is either dead or damaged in which case it's the same as a blind or visually impaired person complaining about $2000 monitors vs a $150 one. Resolution is in the eyes or ears of the beholder apparently.
People buy these headphones for the audible differences, not because they are expensive. If these were $300, it would be nano brainer to buy it but the physical material cost of the beryllium in the drivers alone are double or triple that.
As someone who has headphones at various price points, ($50-$6000) even a $300 one. I can tell you that every person I have demoed the set of headphones to without telling them the price of each could discern which sounded better (spoiler it's the expensive one) using the same audio stack.
