When it comes to multithreaded performance the 7950x3d is around 23% faster than the 7900x, and around 5% slower than the 7950x non-3d. When it comes to gaming performance at 1080p with a rtx-4090, which is basically the best case scenario for a 3d-vcache chip to make a meaningful difference since more realistic configurations will be far more gpu bottle-necked, the 7950x3d is less than 15% faster than the 7900x on average. There are particular games which benefit greatly from extra cache and therefore may have a best case scenario improvement of 25%+, but there are also many other games which see little to no benefit from 3d-vcache. Since I assume anyone spending $800 for their cpu, mobo, and ram will be playing at 1440p or higher the margin is actually even smaller, and is extremely small at 4k. The x3d cpus also have a much more efficient default power/thermal configuration than other ryzen 7000 series processors, but you can achieve similar levels of efficiency on standard x series processors with pbo (precision boost overdrive) and curve optimizer (or if you don't want to mess with that you could just enable eco mode).
The multi-ccd 3d-vcache processors also have some additional quirks which are worth noting. They require the installation of an additional chipset driver which interfaces with the Microsoft x-box game bar in order to determine when you launch a game. Once it detects you have launched a game it "parks" the non-vcache ccd, effectively turning the 7950x3d into an 8-core cpu for gaming. This is done since it both eliminates inter-ccd latency which would otherwise moderately decreases gaming performance, and because the windows scheduler doesn't yet have a way to properly assign tasks which benefit from v-cache (such as gaming) to the ccd which has v-cache. Supposedly if more than 8 cores are necessary the chipset driver will "un-park" the second ccd, but this is obviously an additional bit of complexity and point of failure. If you only plan on doing gaming the 7800x3d will perform just as well while also not having to worry about ccd parking. Certain advanced overclocking features are disabled for 3d-vcache cpus since they are much more sensitive to voltage and thermals, but you can still use pbo so it shouldn't be a huge deal.
Overall, if you have an extremely large budget, are not concerned with price to performance, and want both absolute top tier gaming and top tier productivity performance without using an obscene amount of power like the i9-13900k does, this bundle may be worthwhile. I'd still recommend waiting to see if you could get it with a better motherboard though. Otherwise, I'd just get the 7900x bundle if it fits your use cases, or if you've got a high budget but are only gaming just get a 7800x3d when they eventually have a good sale on it.
First and foremost, DDR5 6000 is the current sweet spot for AMD RAM performance on AM5. New AGESA firmware allows overclocking past this but at a performance penalty due to the loss of Gear 1 (1:1 fabric/uclk/mem sync) above 6400MHz. You'd need to hit 8000MHz or higher on the RAM to make a DDR5 overclock on AM5 worthwhile. Just getting above 6000 in Gear1 mode is a crapshoot, and offers minimal performance gains.
The RAM this bundle comes with is CL30, with some of the other primary timings being just slightly higher than a good 2x16GB kit's timings. It's most likely Hynix A-die, which could potentially be tightened down to CL28 at 6000 with lower primary and tertiary timings as well. This 64GB kit is perfectly fine performance-wise for this CPU and platform at stock settings. No overclocking is needed. For AMD chips with 3D vcache like the 7950X3D, memory timings are not as critical as they are for non-vcache CPUs.
Edit- Forgot to mention that the included 2x32GB kit will have a speed advantage over 2x16GB kits because the larger kit is dual-rank. Someone said the 64GB kit is slower because it is larger, which is flat out false.

For a pure gaming use, is there much more to gain from a slightly better motherboard? The RAM is already overkill and has good CL timings, I can't imagine there's much more to gain there.

Either way, if you're next to a Microcenter there's rarely been a better time to build a bare bones system. GPU prices and game optimization, on the other hand, is variable.
If you are gaming at 4K, I'm not sure the x3D processors are worth it, TBH. You're talking 4%ish difference with a 4090. I might consider saving the $250 and putting it toward a better GPU. If you're playing at 1440p or 1080p on competitive titles where you need every frame, then perhaps it's worth it. But these are high end, costly platforms. I'd assume they are being paired with high end GPUs for high fidelity gaming not CSGO.
