If making any cornbread mix turns out dry or lacking in flavor for you guys, try adding the following:

2 tablespoons of melted butter

1 egg

Buttermilk in place of milk (or the usual milk+vinegar substitute for buttermilk)

A big spoonful or two of sour cream

A tablespoon or two of honey or sugar (omit if you like yours less sweet)

Brush with butter when done baking

I do this with jiffy mix, but I don't see any reason it shouldn't work with any cornbread mix of a similar weight. Sometimes I add all of those ingredients, sometimes I don't. Some of the additions is still way better than none. Don't worry about the batter being to wet or anything like that; I've never had any such problem. Obviously it's not diet food, but when doctored up with those ingredients, you end up with the most moist and delicious cornbread ever. Enjoy!


Ps: make sure you do NOT overbake too. When the edges just start to get brown, it's done!

This stuff's on sale every week. That being said, the cornbread is pretty good. More like a cornbread cupcake it's so sweet

This cornbread is dead easy to make and tastes pretty good, especially if you have a really hot cast iron ready to crisp up the batter before you bake.

Works in Instant Pot with the Egg Bites accessory. Oil the silicon. Lodge is best but this is fast and saves heating up the house.

Olive oil can be substituted for most baking recipes which call for butter. But if health is the goal then why not whip up your cornbread batter from scratch like Betty did in her covered wagon on the Oregon Trail using healthy ingredients like non-gmo corn, aluminum-free leavening. Skip the corn syrup and heavy salt in this.

Might as well just start with plain cornmeal if you do all this and avoid the junk in this mix.
