2 tablespoons of melted butter
1 egg
Buttermilk in place of milk (or the usual milk+vinegar substitute for buttermilk)
A big spoonful or two of sour cream
A tablespoon or two of honey or sugar (omit if you like yours less sweet)
Brush with butter when done baking
I do this with jiffy mix, but I don't see any reason it shouldn't work with any cornbread mix of a similar weight. Sometimes I add all of those ingredients, sometimes I don't. Some of the additions is still way better than none. Don't worry about the batter being to wet or anything like that; I've never had any such problem. Obviously it's not diet food, but when doctored up with those ingredients, you end up with the most moist and delicious cornbread ever. Enjoy!
Ps: make sure you do NOT overbake too. When the edges just start to get brown, it's done!

Might as well just start with plain cornmeal if you do all this and avoid the junk in this mix.
