The R/W speeds on these far exceed anything you'll probably throw at it (outside of benchmarks), so no point in going for the fastest drive available if there's other stats that get beaten out by other drives.

Even if they're using all of the VMs at once, it's unlikely all of them are accessing data at the same time at burst rates.
They mention Plex, which is mostly CPU and network intensive. Even if they were playing uncompressed 4K video, it wouldn't saturate the reads on a fast mechanical drive, let alone a solid state.
The size of the system it's going into is also something to be considered, as the 980 will throttle down in confined spaces with little airflow.
