The quality of life improvements are great such as showtime attacks, ammunition replenishes every battle, and much more than I can list.
They've also reworked mementos, added two new confidants which also really shape up the story.
New third semester adds 20-25 hours of extra gameplay with the new palace being my personal favorite. If you wish to play it, you will have to play through the entire first two semesters first (no way to start the third semester out of the box or transfer old saves)

That's accurate. P5R has much less challenging combat (though you can play on hard if you want - merciless is actually easier if you have good strategy), but smt v has a very weak story and felt pretty grindy. P5R has a whole party with unique personalities and character growth, and has a whole aspect of the game outside combat where you level up your friendships with your party which in turn strengthens your combat abilities.
I have played p5 completely through about 6 times between the original and Royal, and only once through smt v (maybe twice, probably had to go twice to do the post game, sometimes it's like that).
