I don't think Costco people would tenderize steaks mechanically (simply add more labor cost). They usually cut their steaks fresh in bulk from vacuum-sealed whole pieces (usually gone within 1-2 days) while retail stores keep their steaks out on ice for much longer. Therefore Costco steaks appear to be tender and wet. As steak dries and protein/fat starts to degrade, the beefy flavor becomes more pronounced, like aging. I feel you probably will like ribeye cap a lot.

Fact check: I was wrong. They do tenderize most single-cut steaks with blades.

From what I recall, they do mechanically tenderize most of their steaks, unlikely for this though. I believe you can see it on the label as "Blade Tenderized".

I wish this were running through the end of the year. Since the pandemic forced us to stay in for New Year's a couple years back, we've gotten in the habit of making an extravagant NYE meal and inviting a few good friends over instead of going out partying. This would be a great course.

There's a butcher who has a youtube channel and he said the same thing. He approves of those big packs of ribs, but not the steaks. Also, costco (the one near me) cuts the cap off the prime ribeyes and sell it separately which is a big douche move.

The Sam's near me has all of their prime graded ribeyes in a glass case like a regular supermarket so you can buy just 1 or 2 instead of having to buy 3 or 4 like at costco. Plus you get to pick which steaks you like unlike costco which will always have 1 or 2 of the steaks in their pack that look more like choice grade marbling than prime. So when I buy steaks, I go early to look for the ones with the best marbling.

Just came from the local costco. The American ribeye Wagyu is $38/lb, On the package label it clearly states "blade tenderized". So even Wagyu isnt immune to mechanical tenderization at Costco.

I buy beef for major retailers and costco is one of only three retailers in the United States that you can count on in terms of their standards they call for and inspect from the farms they purchase from.. While they are a direct competitor I would never hate on them for thier quality standards. You're that guy that justifies Kroger meats....
