I don't think Costco people would tenderize steaks mechanically (simply add more labor cost). They usually cut their steaks fresh in bulk from vacuum-sealed whole pieces (usually gone within 1-2 days) while retail stores keep their steaks out on ice for much longer. Therefore Costco steaks appear to be tender and wet. As steak dries and protein/fat starts to degrade, the beefy flavor becomes more pronounced, like aging. I feel you probably will like ribeye cap a lot.

Fact check: I was wrong. They do tenderize most single-cut steaks with blades.

From what I recall, they do mechanically tenderize most of their steaks, unlikely for this though. I believe you can see it on the label as "Blade Tenderized".

i got this a few times. i have a deli slicer and sliced thin for shabu shabu or kbbq style. it's worth trying once, but i prefer usda prime.

I simply said that costco meats are less tasty to me than those I purchase elsewhere. That hardly makes me clueless. Also that costco mechanically tenderizes their meats, which is less sanitary. That also is factual because having a blade penetrate the interior of the meat is less sanitary. I understand that Costco has high quality standards, but for some reason, they are tasteless to me compared to other places I buy steaks from. If you are such an expert, please explain why their meat is less tasty, even though higher quality? How does the taste of the meat enter into their quality standards?

You can still buy it now and have it for that time. I'm 95% sure that this will come in a vacuum sealed package, with a certificate of authenticity from Japan. Vacuum sealed meats such as this will last for a couple of months at a minimum. Once opened you'll want to have a plan for the meat though. Save it until you need it, then portion the remaining parts into different foodsaver or similar vacuum bags and vacuum seal them until needed. The best way to eat this is Japanese style, yakiniku on a small grill. Enjoy with Japanese rice (calrose) and between bites pickled mustard greens to help cut the fat.

Cut into several 1-1.5" x 2-2.5 bite sized pieces about 1/4" thick on a hot grill to quickly sear it while medium-medium/rare in the middle. Instantly cook each bite as you go.
Melt in your mouth delicious!
However being A5 and ribeye cut, this will be insanely rich.
I actually prefer slightly lower grades with less fat to bring back some meatiness texture.

Think of this as like a Jamon Iberico, small slices/portion at a sitting where you can appreciate the quality and have plenty more for later!
