So now we're going to get upset about decent writing instruments that are priced so people can try out an interesting pen or a different ink using about the amount of plastic found in the packaging discarded with a breakfast yogurt or soda bottle.

If you are talking about asian calligraphy . Pentel pocket brush pens are relatively inexpensive..

If you want a regular fountain pen with a smoother nib, Pilot Metropolitan (medium/broad nib) is also great, and again cartridge are easy to find (and refill with bottled ink). Personally I find my Metropolitan medium nib to be as wide as I would use for writing in a college ruled notebook.
The Europeans tend to have broader nibs in general (i.e. Japanese Medium is European Fine), so a Lamy Safari or a Kaweco sport in a broad nib would be pretty fat and is usually pretty smooth (their quality control isn't great).
In terms of waste, single-use plastics suck for sure. However, a lot of the folks whining about disposable fountain pens (and disposable pens in general) have a drawer full of 56 fountain pens and a wall of bottled ink that they will never finish. On the other hand, assuming these don't dry out, six disposable fountain pens is at least a years supply of pens for most people. Which is more wasteful?
I also view these as gateways to fountain pen usage. You may not be willing to commit to buying a fountain pen, bottled ink, cartridges, etc. but you've always been curious about fountain pens. I think a lot of people probably started with a Pilot varsity and got sucked into the fountain pen hobby. Obviously if you exclusively use disposable fountain pens and buy this set every year, it's pretty wasteful, but a one time purchase hardly registers on the scale of human waste.

I do have some nicer pens, a twsbi eco, a lami safari, a moonman t2, but I keep gravitating toward some of the excellent super-inexpensive options that perform pretty much just as well... in fact, I just bought a Picasso 916 Malage with an ultrafine accounting nib and really like it for small writing and it flows exactly as much as it needs to in order to provide an excellent writing feel but not enough that it bleeds through cheap paper (which is a really tough balance).
Are there pens that are much better? absolutely (especially once you start getting into the gold nib territory), but can a cheap fountain pen be reliable and provide an excellent writing experience? - sure!
