I'd say you can get the new service activated in about 40 minutes from the moment you hang up your phone with phone support for cancellation.

You will need to cancel over the phone. Request for immediate termination. Once your Internet is down, you can select your home for new service. The Xbox offer is only available online so go thru the online process and put the order in your cart. Then call back to request for assistance on the order in the cart to turn on service. Say that you will self install same day and that you use the existing router while the new one is shipped. They will tell you it will take a few hours so kindly ask to expedite the service; stay on the phone with them. Ask if the addl $50 vz gc from reps are still available. That's it...
Make sure you have good cell service to order via your mobile since your home Internet will be down or put in your order at the neighbors, friends, or work place.
While you are in the mood of saving, do these things if applicable;
-Sign up for auto pay to save another $10/mnth.
-Sign up for Mobile+ Home if you have 5g unlimited wireless to save $25/mnth.
-when you get your order confirmed, take that receipt and send to 'wheres my cash' on eeeebates to score that $56

As a current FIOS subscriber I was able to cancel and resubscribe and am seeing all the promos.
Placed deactivation order for current service Dec 14. Picked a deactivation date a week away give or take. Dec 20 I think was the date I picked but it doesn't matter because I'll cancel service as soon as I get the router which is usually less a week.
Ordered new service on Dec 14th.
Router received on Dec 16
Canceled old service Dec 18
Activated new service Dec 18
Xbox and Amazon GC showed up under offers when logged in to the account and was able to claim both. Xbox shipped already. Amazon gift card says 24-48 hours
Verizon GC says I can't redeem until Feb 21 because it's not supposed to be available until after 65 days of service.
Where I might have messed up is that I ordered 1 GB streaming instead of 1GB gaming so I might miss out on the $50 Xbox gift card. Tried to chat up a rep and see if they can change it to no avail. I have no need for the streaming promos. I wanted the Xbox gift card but oh well. So be careful when selecting streaming or gaming as it does not seem to be reversible.
I was at work when I did the cancelation and activation. Nobody was home. So I have no idea how long I went without internet. I activated around 10 AM and nobody was home until 4 PM. Went home later and just swapped the router. Think I had a WiFi 6 router and they sent a new 6E one. The new service works with either router but I do have to return the old one so I swapped to the new one ASAP to free up the old one to be returned.
Edit: received Amazon gift card via email already. Xbox series X to be delivered 12/20.
Also, is this brand new different account or could you use your old account to have your new plan on?

Signed into my vzw account, put your same address in as new address, it will warn you that "someone" already has service there, ticked they are moving out and I'm moving in. Then it offered me all the new user deals (I guess it offers the same to people who are moving.) No cancelling resignup needed. In my case a tech did need to come out to convert the ont run from coax to Ethernet.
When he came out he looked at the paperwork with a confused expression. I was honest with him saying I "moved" to get the latest new customer deals. He laughed and said no problem and hooked me up.
