Looking at that page, wouldn't the N100 16GB/500GB for $175 be a considerably better deal for $50 more?

N100 vs. N5095 CPU

You are right. If definitely is. However, I posted the cheapest option in case someone would prefer that lower spec lightening deal.

What are people using these for? I'm looking between this and getting a NAS. I feel like I probably need a real NAS which will double as a home server so I won't even need something like the Beelink?

I use mine to play steam games on my big screen that require little/no resources, such as visual novels. Currently playing through Steins;Gate again

For the price, it's a decent little unit for streaming or light office work. I know someone that uses a N100 for plex server with their NAS.

If you're looking for anything more, I'd probably look at a refurbished Optiplex SFF/MFF.

It's more convenient for sure but you have to get a pretty high end NAS to get hardware transcoding on the level a cheap mini PC can provide.

I personally prefer to go with a cheaper NAS with limited RAM, an ARM processor, etc that just functions as a file server and pairing it with a mini PC for tasks that require more power.

I'm using a cheap QNAP TS-233 and it works great for my use case.

You can absolutely use a DAS. You can even just plug in a big external hard drive for your Plex server if you're not worried about redundancy.
