What is power monitoring, exactly, and why is it important on these devices?
The app will show you the power draw of the device plugged into the outlet. It's a nice feature to see how much power you are using for specific devices. For example, plug a desktop PC into an outlet with power monitoring and see how much power your PC uses.

I know it doesn't have power monitoring but seems to be the cheapest matter plug unless I'm wrong.

Buying directly from their website is cheaper!

https://us.store.tp-link.com/coll...tapo-p125m

Of course you do not get Costco return on that though.

I see a 1-pack for $9.99 or 3-pack for 24.99(sold out). I think Costco has a better price

one pack has 3 plugs, yields 3.33 per one.

Above is incorrect.
edit: one pack is 9.99$, 3pack is 24.99$.

Pretty sure 1-pack had 1 plug and 3-pack had three plugs. The first photo shows the boxed 3-pack and the second photo shows boxed 1-pack.

That doesn't make sense and is incorrect.
The pictures can cycle between a 1-pack and 3-pack, for some reason it defaults to showing the 3-pack even when 1-pack is selected.

I got a bunch of free Kasa plugs from OhmConnect. I was mainly using them for lamps but I eventually got a bunch of Wiz bulbs to change color/brightness and now I don't know what to do with all the plugs. I have some on major appliances like washer/dryer/dishwasher, and I've added them to coffee maker and toaster oven to turn off at certain times. The dishwasher plug was super helpful when I was troubleshooting an issue, I could restart the dishwasher without completely removing it.

These definitely come in handy during the holidays, great for turning on Christmas lights on a schedule.

Is there something useful that can be done with energy monitoring plugs?

They stopped supporting Kasa for a while. I received an email few days ago from them instructing moving all the Kasa stuffs to Tapo.

EEK! What?

Is this true? I haven't heard anything like this. To my knowledge the last correspondence I saw was that they were continuing support for both ecosystems moving forward.
