Not sure whats been removed, but having tried both for a while, it's ENTIRELY about looks and battery life. Period..
5 Pro ,= MUCH better battery
6 Classic = Rotating Bezel
It's a personal choice. I prefer 5 pro. Performance wise, they are identical, both have occasional stutter.

For when you're busy and have your hands full or are dirty (happened to me 2 days ago and i was able to see why my phone was buzzing. wasnt drop everything important but at least i knew what it was) or when you don't want to bring your phone (if you have LTE) or not having to waste time pulling your phone out each time you get a new notification. I use my 5pro to check texts and notifications to see if it's worth my time to respond right now or can it be put aside for now and I can get back to them in a little bit. I use it to be more efficient with my time. others use it for tracking their health. others use it for their kids to have a way to track them and have a way to get a hold of them at school or after school in an emergency.
Any time I do incline on treadmill (which is every time I use the treadmill) it doesn't track steps. Maybe it's tracking it as stairs, I don't know. But in any case I've had issues with my non-classic watch6. Also had issues with my Watch4, where it would count steps randomly.
Also with the watch6 I have, it feels like there's some ghosting on the display. Didn't have that on my Watch4 or galaxy watch Active
If I could, I'd never have traded in my galaxy watch Active as it worked better than the Watch4 and watch6.
good to know, yeah I saw just around the holidays u get it for only $60 w/ trade, sammy can do better.
As the proud owner of a 5 pro, I approve of this message.
