21 different species use the term Sardines. The term is used interchangeably between all of these species, because the term Sardine actually translates to: any of several small fishes, belonging to the Herring family. Often packed in oil and placed in tins. There is no TRUE Sardine fish, lol. If you want the most common fish, used as Sardines and eaten by real locals, they use the European Pilchard most often, but even the name of that fish(same herring family) is used interchangeably with several of the other 21 species, so basically they are all considered the same.
Pure sardine lovers are NOT concerned with the species as they are all almost identical. They are more concerned with the quality of oil used in packing them and the freshness of the fish when packed. In Italy they are often eaten on Baguettes, sometimes with butter, sometimes they would use some slices of a small tomato(forgive me, I don't know what kind of tomato they were using).
They are also eaten for breakfast on a type of toast/bread in a couple countries, although I do not like them for breakfast.
