I need a filter brand 19.5 by 29.5. I don't even know why they made the return this size when most of the filter brands that I come across are 20 x 30.
Can I double up these? My Carrier furnace uses a proprietary 3" thick filter that costs $130...
Not really recommended. Those are usually accordion style and provide more surface area for better filtering and airflow. Doubling them up can reduce both as the second filter is really just taking up space.
You can find better deals only for those style filters if you search around.

"I see your MERV is bigger than mine...." for the longevity of my new HVAC I only use MERV 8 or 5. The HDX from HD are a good deal. If you change them every 90 days, you likely don't need expensive filters (ymmv, read your hvac manual)

This same brand is selling for 50$ on Amazon for the 6 pack. So this is a good deal for standard merv 8 filters

I disagree. This is just an ok deal for ok filters.
I buy higher quality Merv 11 1000-1200 MPR filters for about $8 (6 pack) more all the time …
Also it's $29.99 for all (22 of the 23) but the absolute smallest filter… for the 6 packs… not to haggle over a buck but this is SD😀
The 12 packs differ even more in price as they get larger…
