With sim racing rigs, anything that has a bar in the middle, like the Playseat Evolution, is poorly rated on the sim racing subreddit. I have no first-hand experience, but I always see comments saying how uncomfortable it is.
However, for anyone who wants to look into it, Woot has the non-pro version without Red Bull branding for $100 less than the one shown in the OP, so $250.
That seems like a more palatable price point, though I don't know what it usually goes for. If you're at $350 though, you may as well just get yourself a proper aluminum profile rig.
The seat is always what makes them so damn expensive so the slickdeal way would be to get an aluminum profile rig and a nice car seat from a junkyard for less than $50, which would be a lot more comfortable anyway.

Former Playseat Evolution user here. I'm not sure if "uncomfortable" is the word I would use... however, they're definitely "inconvenient" especially if you're on the taller side. I'm 6'8" and due to the placement of the pedal deck, I had to wrap my left foot around the vertical support bar to use the brake pedal. When I was in the process of buying a Fanatec setup with a loadcell brake pedal, I knew that wouldn't be happening... so I sold my seat and got a different one that doesn't have that vertical bar.
And yeah, at $250, that Woot deal is pretty slick if you're no taller than ... say... 6'3" and don't use a load cell pedal.

The Red Bull one looks good but not very adjusted as you said. Doesn't look like you can change the angle of the long bar that holds the wheel. What kind did you get? Is it more adjustable?

The one I had only allowed you to adjust how far away the pedals plate was from the seat... and IIRC, the height of the wheel base stand.
If you have multiple players in your house and you can get a seat adjustment rail, I highly recommend it. It makes player swaps SOOOO easy and you don't carve "rings" from the adjustment screws into the main rail (assuming it still works like the one I used to have).
