Do these perform the same as the official, Apple one that Reddit recommends for wired headphones? I think they mention the DAC in the Apple dongle that is pretty solid for the price?

I would go with the Apple for $10.

The Insignia has an unknown DAC, and cheap connectors. Just read the reviews [bestbuy.com].
