One egg for every ounce of cream cheese, add a little stevia. Can cook in a frying pan or make a big batch on a cookie sheet.

Just rice flour and potato starch? As with Pillsbury (at least the pea fiber was innovative), it amazes me name brands don't do any real research and just cash in with some slop product, risking their reputation. Whatever.

I'd say it depends on how health conscious you want to be. A lot of the GF pancake mixes have sugar as the first or second ingredient (it's the second ingredient in this Bisquick option). If that's ok with you, then I'd probably say Trader Joe's has the best consistent texture in my experience. If you would rather something with a better nutrition profile, I'd go with Kodiak. That's our usual go-to these days.

If you are lucky enough to have an Aldi's near you their Millville Buttermilk Complete pancake mix is really good. $1.99 for 32 ounces at my local store. Good as is, but mix it up with milk instead of water, add a little healthy oil and and egg to boost the protein and oil to slow down the carb crash. I like it better than the name brand pancake mix. Give it a try.

I usually use krusteaz or Kodiak pancake mix . It requires to just add water and mix. Bisquik requires to add egg, oil, etc

There are also many people with chronic health issues who may want to investigate possible wheat allergies or sensitivities and can only do so by buying such products.

You make fair points, and it's important that those buying understand exactly what they are getting. However, I don't think there's anything gained by shaming people for trying different products. I'd also argue that those without such health issues should experiment in their cooking just in case they end up with a guest who does. That said, they should also be aware of cross-contamination and proper controls or you defeat the purpose.
