I don't know why everyone complains about this. This is pretty much always what you get for under $400. And 250 nits is perfectly fine for indoor use. I'm using a laptop with a 250 nit screen right now and I've got the brightness set to 10%.

Wish I could help. I haven't been able to understand the relative rankings of CPUs since the simple Pentium days of years ago. I think their nomenclature is designed to confuse.

This particular one is more or less a relabeled 13th gen CPU with a bit of a clock speed bump, though. But it should have very good performance for the price. I wouldn't expect battery life to be great, especially with a 3-cell battery.
and they also made 2 types of 5's, the core 5 which is the lower level and the core 5 ultra which is the higher level. Change for the sake of change.

That is only for the Touch Screen Models.
This one is not. It has TN screen.

As far as I can tell a key differentiating factor between the 120u and the 125u is the lack of an NPU in the 120. Thoughts?

If you really want to use it outdoors. There are blankets on Amazon for $7 or AliExpress for $2 you can throw over your head and laptop.

The 120U is Alder Lake mobile Refresh Refresh, unrelated to the 125U which is a Meteor Lake-U chip. The graphics should be worse.

The cpu is fast with a bentchmark of 17000, personally I would go with a used machine with a better screen, I really do not need the speed, but like a better screen, the used Dell XPS have great screens. YMMV
